It's cool to be a total beginner to Linux and modding the Xbox, but make sure that before you do ANYTHING the requres modifying the Xbox in any way, look up the tutorials so you know a little what you are doing. http://www.xbox-scene.com can give you tons of info about modding your box, and http://www.tldp.org is a nice site for Linux info.
In regards to your post, the benefits of running Gentoox on the Xbox varies from person to person. I find it convenient to use my Xbox to browse the Internet and carry on conversations while the family PC is in use. I also use it learn about operating Linux, as I am unable to effectively do on a shared PC. You can also host various types of servers using Gentoox (as long as you work out the issues with your ISP ). It is also a great learning experience in general. You can easily get a USB adapter for you Xbox (or even make your own). I don't have any sites off hand to suggest to you, but always remember that Google is your best friend. You can either get two adapters (one for your keyboard, one for your mouse), or get one adapter and use a keyboard that has USB ports on the back/side of it. I hope you find this information useful.

No, you do not need a modchip to do this. You can "softmod" your xbox, which does not require you to open the xbox. All you need is a few extra materials. I personally have not successfully softmodded an xbox before, but tutorials can be found at http://www.xbox-scene.com/tutorials.php under the Explots/Softmod Guides section. Or you can go to http://www.xbox-linux.org (a website specially aimed at xbox users wanting to install Linux on their xbox) for more information.
Edit: http://www.xbox-linux.org refers to softmodding as "software modification"
