Installing MySQL

For phpBB I think you install (you can do this with emerge phpbb) then do the setup with your web browser, all you need to do in mysql is create a blank database, but the info is in the phpbb manual.
For nuke you use the dump file that comes with it to set the tables up in your database again RTFM.
I've not used gallery but all the info you need will come with the package.

If you want a gui to look at the mysql database and you are on a windows box via network give Navicat a try, might make things easier for a beginner. But as said above you dont need to set up the tables for those, just a database instance. The included docs with both cover it in great detail.
