I need to open /etc/init.d/gdm with an editor to make a few changes in it. However no matter which editor I try, the content is always messed up or not displayed at all.
Do I have to use a special editor or install some missing fonts??

I want GDM to display all textes in German when booting the first time. Actually this works only when I kill and restart GDM. I searched a few forums and used Google for a while and I found out, that I have to add the line "LANG=de_DE@euro" to /etc/init.d/gdm.

What you're looking at isn't /etc/init.d/gdm (which, btw, doesn't exist on my box...). You're looking at /usr/bin/gdm, which is a binary file (hence the binary when you edit it). I'm not sure the details of what your'e trying to do, but I assume it should be added to one of:
/etc/conf.d/gpm
/etc/init.d/gpm
/etc/X11/gdm/gdm.conf
/etc/conf.d/gpm
/etc/init.d/gpm
/etc/X11/gdm/gdm.conf
